Meet the SugarScot
A thick, golden shortbread-style sugar cookie with crisp edges, a soft centre, and a whisper of vanilla. Buttery enough to feel special, simple enough to make at home. Here's our recipe — because good cookies should be shared.
SugarScot Cookies — makes ~18
Ingredients
- 225g unsalted butter, softened
- 200g caster sugar (+ extra to roll)
- 1 large egg
- 2 tsp vanilla extract
- 320g plain flour
- ½ tsp baking powder
- ¼ tsp fine sea salt
Method
- 1. Cream butter & sugar until pale and fluffy.
- 2. Beat in egg and vanilla.
- 3. Fold in flour, baking powder and salt to a soft dough.
- 4. Roll into balls, dip tops in sugar, space on a lined tray.
- 5. Bake at 180°C / 350°F for 11–13 min until edges set.
- 6. Cool 5 min on the tray — they keep baking.
Classic Cocoa
Deep dark chocolate dough with melty chunks throughout.
Brown Butter Oat
Nutty browned butter, rolled oats, a pinch of cinnamon.
Salted Caramel
Soft centre with a hidden caramel pocket and flaky salt.
